How to Read a Sushi Menu

A sushi menu can look like a foreign language, because in part it is. Here is a short guide to help you order with confidence on your next visit to Sushi Wabi.

The building blocks

Nigiri is a small bed of vinegared rice with a slice of fish or seafood pressed on top. It is priced per piece, so you can build your own tasting flight. Start with sake (salmon) or maguro (tuna).

Sashimi is the fish on its own, no rice, sliced to show off its texture and freshness. If you want to taste the fish at its purest, this is where to look.

Maki are the rolls: fish, vegetables, and rice wrapped in seaweed. Our classic maki are the friendliest place to start. Our signature rolls are where the kitchen has a little more fun.

A few words worth knowing

  • Hamachi is yellowtail, buttery and clean.
  • Unagi is fresh water eel, grilled and brushed with a sweet glaze.
  • Ikura is salmon roe, bright little beads that pop.
  • Uni is sea urchin, rich and oceanic, for the adventurous.
  • Tako is octopus, ika is squid, ebi is shrimp.

How to build a great order

A good rule of thumb: one warm starter, one roll to share, and a few pieces of nigiri or sashimi to taste the fish. Add a bowl of miso soup and you have a complete meal.
