The simplest way to serve fresh fish is to not keep much of it. We order in smaller amounts more frequently, so what you eat today likely arrived today. It is less convenient for us and much better for you.
Cold chain, unbroken
Fish is delicate. From the moment it arrives, it lives at the right temperature, handled as little as possible, portioned only when needed. Every unnecessary minute out of the cold is a minute of quality lost.
Made to order, always
Nothing sits under a warmer. Rolls are built when you order them, nigiri is pressed to order, and tempura is fried to order. It takes a few more minutes, and those minutes are the whole point.
